Sure, basil pesto is a classic; but cilantro has become one of my favorite herbs. I know a lot of people hate cilantro, because I used to be one of them. After I started juicing and eating more clean, I actually started enjoying the taste of cilantro… And now, I actually crave it! I put it on everything- salads, wraps, eggs…
But this cilantro pesto recipe is a great way to use up fresh cilantro that’s on it’s way out, or to concentrate the flavor with some spicy raw garlic.

Delicious Cilantro Pesto
• 2 cloves garlic
• 1 bunch fresh cilantro (washed and spun dry)
• 1/4 cup good olive oil
• 1/4 tsp kosher salt
• 2-3 TBS nutritional yeast
Trim any tough stems off the cilantro, blend all ingredients together in a high speed blender or food processor.
Enjoy on salads, sandwiches, drip onto soups, toss with hot pasta, rice or zucchini noodles.
