Kale & Sweet Potato Nested Eggs

This recipe is pretty quick, healthy and paleo. Makes a great breakfast or breakfast-for-dinner. This recipe serves 1-2. 

1 small sweet potato sliced thin

1/4 cup coconut oil 

2 cups kale (washed and ripped)

2 eggs 

Red pepper flakes, salt, pepper. 

Optional Parmesan cheese to top.

For the potatoes: 

In a skillet, heat coconut oil. Fry the sweet potato slices until brown, turning periodically about 4-5 minutes.  Drain on paper towels and set aside. 

Remove some of the oil, and add in the kale. Cover with a lid to steam about 4-5 minutes, then remove the lid so the kale browns up in the remaining oil. 

Add in the potatoes, and create two nests for the eggs. Add in some water so the eggs steam. Cover and set to medium-low heat. Let the eggs steam away until they are cooked to your desired doneness. 

Sprinkle with salt, pepper and red pepper flakes to taste. For added richness, add some Parmesan cheese.
