Sweet Corn, Black Bean and Tomato Salad

Fresh flavors combine for this simple summery salad. Use this salad as a salsa and serve with chips, or use as a topping for tacos. Add this salad to chopped lettuce for a taco salad. Lots of possibilities here! This salad will keep very well in your refrigerator, and will continue to marinate as it sits.

Fresh Sweet Corn, Black Bean and Tomato Salad

Makes 4-5 cups

1 cob of fresh bicolor sweet corn (Local here in Michigan- the best you can get)

2 large tomatoes

1 can black beans

Juice of 1-2 limes

Fresh cilantro

1/2 fresh jalepeño diced (optional)

Salt to taste


1. Slice tomatoes in half, and squeeze to remove seeds and excesss water. Chop into small pieces.

2. Cut the corn off the cob.

3. Drain and rinse canned black beans.

4. Combine all ingredients and mix well.
