Paleo Banana Bread

Banana bread was a staple baked good growing up in my house. It was always a way to use up bananas that were overripe, and it made a great breakfast on the go or snack for long car rides.

This recipe is a Paleo version that eliminates the wheat and sugar of a traditional banana bread. This is my take on a recipe that I originally got from Elana’s Pantry. You can check out her recipe here.

Paleo Banana Bread

3 large bananas

3 eggs

1 tablespoon vanilla extract

2 teaspoons honey

1 teaspoon cinnamon

1 teaspoon ground ginger

1/4 cup coconut oil or grass fed butter

2 cups blanched almond flour

pinch of salt

1 teaspoon baking soda

Combine all ingredients into blender, and pulse to combine.

Pour batter into a greased loaf pan.

Bake at 350 degrees for 55-60 minutes. Check center with toothpick. Allow to cool completely before you slice.
