Avocados have to be one of my favorite things.
They are creamy, buttery and a good source of plant based fat; which is essential to my eating plan.
A lot of people ask me what I use as salad dressing; and this recipe works great as a salad dressing, or as a dip!
Carrot, celery or jicima sticks are the perfect dippers.
If you want to use this as a dressing; simply toss it well into the leaves – coat them extremely well, and it will make your salads incredible.
Spicy Basil Guacamole (Dressing or Dip)
handful of fresh basil
juice of one lime
pinch of kosher salt
1 garlic clove
1 serrano pepper (or pepper of your choice/to desired heat)
2 ripe avocados
Pulse first 5 ingredients together in a food processor until well chopped; then add in your avocados and blend until smooth.
Stores well in the fridge for several days. The lime juice will prevent the avocado from turning brown, but you can also put a small layer of water on top of the guacamole for storage; then dump it out when you’re ready to use it. This prevents oxidation.
